Domino Squares
Base:
½ cup melted butter
¼ cup sugar
1/3 cup cocoa
2 cups graham cracker crumbs
1 cup shredded coconut
½ cup chopped walnuts (optional)
1 teaspoon vanilla extract
1 egg
Combine all ingredients well. Press firmly into 9x9” pan. Refrigerate.
Middle:
¼ cup butter
2 Tablespoons INSTANT vanilla pudding powder
2 cups icing sugar
3 Tablespoons milk
Cream icing sugar and butter well. Add pudding powder and milk and mix to a creamy consistency. You can add flavoring and/or coloring to this layer.
Top:
3 oz. Semi-sweet chocolate
1 Tablespoon butter
Melt together. Spread on top.
Poppy's Favourite Oatmeal Cookies (aka Crispy Crunch Cookies)

1 cup butter

1½ cups brown sugar
1 egg
1¼ cups oatmeal
1½ cups flour
¼ teaspoon salt
¼ teaspoon baking soda
2 teaspoons baking powder
1 cup coconut
1 cup raisins (or chocolate chips)
½ cup nuts (optional)
Cream butter and sugar. Add egg.
Combine flour, salt, soda and powder.
Mix oatmeal into creamed mixture.
Add flour mixture.
Stir in remaining ingredients.
Drop by spoonfuls onto an ungreased cookie sheet. Bake at 375º for 12 minutes.
Potatoes Extraordinaire
5 lbs potatoes
8 oz cream cheese, softened
1 cup sour cream
¼ cup butter
1 Tablespoon onion powder
1 teaspoon salt
¼ teaspoon black pepper
Peel and cook potatoes as usual in salted water.
Drain.
Mash well.
Add the cream cheese in pieces, while mashing or whipping slowly on mixer. Mix in the remaining ingredients and beat until smooth & fluffy.
Scrape into a 2 quart casserole. Put dabs of butter on top and sprinkle with paprika.
Heat through in a 350 degree oven.
You can make these a day ahead and reheat to eat – it will just take a little longer from cold.
